Osmosis and salt water question..please help?

I did two experiments this fall, both of which involved osmosis. In the first, I placed a stalk of celery in salted water. The celery became dehydrated and wilted. In the second, I placed my Thanksgiving turkey in salted water. The turkey meat became juicy and succulent. Explain the reason for the difference.
